New Year's Eve Black-Eyed Pea Dip

It's obvious that I should post a recipe that would go with our New Year's Eve tradition, right?  I am not a big fan of black-eyed peas, so I thought this might be a great substitute for those of you, like me, who want to stick with tradition without that bowl of tradition, ya know?  See what you think!!


1 (14 ounce) can black-eyed peas, drained
1/4 onion, Chopped Fine
1/4 cup sour cream
8 slices jarred jalapenos
1 cup grated sharp cheddar cheese
3 tablespoons salsa, or to taste
salt and black pepper


Directions:
Preheat oven to 350 degrees. Drain black-eyed peas and partially mash, leaving some whole.
Add all other ingredients, stirring to combine.  Spread into a 1 1/2 quart baking dish and sprinkle extra cheese on top.  Bake for 20 to 30 minutes until hot and bubbly.  Serve with tortilla chips!
